Pumpkin Protein Pancakes

 

Ingredients:

1/2 c. canned pumpkin
2 egg whites
1 scoop protein powder (vanilla)
Cinnamon and pumpkin pie spice, to taste

Directions
Blend ingredients together.Spray pan or griddle with cooking spray and cook pancakes for a couple of minutes on each side. Top with sugar free syrup. (I LOVE Carey’s brand) or peanut butter or fruit.

*Nutritional info varies due to brand of protein and toppings chosen.

Note: The pancakes will not have the same texture as fluffy pancakes made with flour and will be thinner and “eggier.” BUT much better for you.
